Chicken Enchiladas,Karate & some good news

I made these the other night and just have to share this recipe, they where so good and pretty simple to make so if you want restaurant style enchiladas you have to try these. and the cilantro is a must, it makes this dish!
Chicken Enchiladas with Red Chile Sauce

1 medium onion, chopped fine
2 jalapenos, seeded and chopped fine- i didn't use this just because the girls where eating too
1 teaspoon canola oil
3 medium cloves garlic, minced
3 Tablespoons chili powder
2 teaspoons ground cumin
3 teaspoons sugar
1 15-oz can tomato sauce
1 cup water
1 large beefsteak tomato, seeded and chopped
1 pound boneless, skinless chicken breasts (2 large breasts)-i used a can of chicken
1 cup extra sharp white cheddar, shredded
1 cup monterey jack cheese, shredded
1/2 cup minced fresh cilantro
12 (6-inch) soft corn tortillas
cooking spray
salt and ground black pepper
Preheat oven to 425.

Combine the onion, jalapeno, 1/2 teaspoon salt, and oil in a large saucepan. cover and cook over medium-low heat, stirring often, until the onions and peppers have softened, 8-10 minutes. Stir in the garlic, chili powder, cumin, and sugar, and cook until fragrant, less than 30 seconds. Stir in the tomato sauce, water, and chopped tomato. Bring to a simmer, and cook until slightly thickened, 5 minutes.

Nestle the chicken into the sauce. Reduce heat to low, cover, and cook until chicken is cooked through (thickest part reaches 160 degrees), about 12-20 minutes. Transfer the chicken to a plate, and set aside to cool.

Strain the sauce through a strainer into a medium bowl, pressing the onion mixture to extract as much liquid as possible. Transfer the onions to a large bowl and set aside. Season sauce with additional salt and pepper to taste.

Shred the chicken into bite-sized pieces. Add to the onion mixture, and add 1/4 cup of the enchilada sauce, 1 cup cheese, and the cilantro. Toss to combine.

Stack the tortillas on a plate and cover with plastic wrap; Microwave on high until warm and pliable, 40-60 seconds. Spread the tortillas on a clean work surface, and spoon 1/3 cup of the chicken mixture evenly down the center of each. Tightly roll each tortilla and lay seam-side down in a greased 9x13 inch baking dish.

Lightly spray the tops of the enchiladas with cooking spray. Place in the oven, uncovered, for about 7 minutes, or until the tortillas start to brown slightly (skip this step if you don't like the crunch).

Reduce heat to 400. Remove enchiladas and pour sauce evenly on top. Top with the remaining cheese. Cover dish with foil, and bake an additional 20 minutes, or until heated through.

Remove foil and bake another 5 minutes, until cheese browns. Remove from oven and let stand 10 minutes before serving.

Serve with sour cream, guacamole, salsa, additional cilantro, etc.

Last night I took Jaylee to karate, it was a test night for her 2nd stripe. She got her 2nd stripe and broke another board, after class I was telling her how proud i am of her and she said "mom I broke that board like a beast"! I about died, really where does she get this stuff. So one more stripe and she's onto the orange belt!




Now for the good news update. Jeramey had his 10th treatment yesterday and met with the doctor before treatment. Bryan hospital had finally sent the original CT scan that was done in May before treatment was started so Dr. Shepard could finally do a side by side comparison of the liver from the scan he did 2 months ago and the scan before treatment. He said that there is a lot more healthy liver now than from before we started! So that means the chemo is defiantly working and shrinking the spots in the liver! Best news we've had in a long time, I'm hoping after the 12th treatment that scan will show even more improvement, which i know it will, this husband of mine let me tell you he's a fighter and he WILL beat this! So that's our good report for the week, thank you all for your continued support and prayers that means so much more than we could ever tell you!

 But they came home as yellow belts!!

 They had to break more boards and do all their kicks for the yellow belt test

3rd Stripe!

Someone got her 3rd stripe at karate last night!!! We are so proud of her, so next up is the YELLOW belt! She can't wait:) Oh yeah Daddy got his 3rd stripe too, we are proud of him as well:)

Long Overdue

We're still here, sorry for my lack in posting. I thought I had better give an update as I've had many of you ask if everything was okay, we appreciate the concern in the lack of updating but it hasn't been because things aren't going well. We have been just so stinking busy and have been trying to enjoy summer as much as we can since it is almost over already!

So I will do my best to bring you up to date with us:)

Jaylee had her last t ball game last week so we are finished with that. She had so much fun and cant wait for for year!

Last night Jeramey and Jaylee started their second session of karate, we debated on doing this second summer session or waiting until the fall session to start up again but Jaylee really wanted to do it so we figured we would. She really likes doing it so as long as she wants to do it we will send her. I know Lex can't wait until she can go she has a lot of the moves down pat its way to cute to watch her!

Here's a little look at some of what we've been up to

 teaching Jaylee new tricks, she swims under water, dives for sticks, does back flips off the ladder and learned to dive!
This is the new entrance to to pool Jeramey built, I think he did a great job. it's so much easier having on this side!

Now for a update on Jeramey.  Last Tuesday he had round 4 of his chemo treatment, I think this was the best round yet no side effects at all so we were very happy with that.  Before they started the treatment his doctor came in and said he was very happy with the progress so far, they do blood work before each treatment and he said that all his levels are down! So he is very pleased with how things are going and said when we do a scan we should see some good progress! Let me tell you that made my day heck that made my month! It was so nice to hear that these treatments are doing what we want them to do and we just pray that it continues to do so. So we go for round 5 on Tuesday, and get disconnected on Thursday. Then 2 weeks later we go back for round 6! So please keep the prayers coming, we appreciate each and every one of them!

Weekend plans are as followed: POOL, POOL, POOL! We are having friends over Saturday so that should be fun! Good food, Great friends, and some yummy drinks sound like a perfect day to me! I promise to try and update a little more often:) Have a wonderful weekend!

Our Little Karate Girl!

Last night Jaylee had her Spring show for karate. She was so excited to get out there and show us all she learned! She did a great job, she was so cute she was trying to pay attention and do what she was supposed to but there was a couple of times she was looking to make sure Daddy/Gma/Gpa & I were watching:) But they all did great and looked so cute!

 I think the whole room was sitting in suspense waiting to see if she was going to break the board! They had never done it before so I was a little nervous:)

 and she did it on the first try! She was so pumped, she looked right to her Daddy after she was done and I don't know who's smile was bigger hers or his:)
 She also received a award  for her first year, a metal and a patch for her que

And of course this little copy cat was there to watch too! I know we will have another little karate kid with this one she loves trying to do what her big sister does! All the way home she kept saying sissy go Hi-yah! A couple more years and she will be out there too!

First stripe!

I don't know why my post didn't go through when I did it last night so I'll try this again:)

Jay & Jeramey came home from karate tonight and had something pretty exciting to show Lex & I! They both got a stripe on their belts! Jaylee was pumped, they need 3 stripes to move up to the next color belt and Jaylee is so looking forward to another belt! I love that this is teaching her that she has to work for something thing she wants, and I can't wait to see how excited she gets when she accomplishes that. Karate is defiantly something we will stick with and continue also with Lex.So here are a few pictures of her showing off her stripe to Grandma:)

While Daddy & Jaylee were at karate Lex and I blew walked over to Grandma & Grandpa's for a visit, well I walked she rode:) I think she's really enjoying her time alone with me on karate night, and I am too:)
Happy half way there, we are so ready for the weekend already! It's going to be a great one, did I mention it's going to be birthday central, Laynee's birthday and party on Saturday then Jaylee's party on Sunday followed by her birthday on Tuesday! I seriously can't believe she will be 5!

Karate Kid!

 Tonight Jaylee & her Daddy had their first karate class! Jaylee has been looking forward to this for weeks now! She was so excited this morning when she woke up! I hope she has this reaction to everything she does, I want her to be excited to try new things and to never be afraid. This is a 7 week class so they will go every Tuesday night until the end of May so stay tuned for more pictures and updates throughout the next several weeks:)
 She did so well paying attention it was like she was taking in everything she was being told!





 I can't get over how stinking cute she looks in her out fit!

 She was showing Grandma & Grandpa everything she learned, I think it's safe to say this will be something we will continue to do over the years:)
 Little sis had to try on the gue too! I think we have another little karate kid on our hands!
